Wash and dice tomatoes.
Chop fresh herbs.
Peel and dice onion.
Combine vinegar, oil, basil and toss to taste in a large non-reactive bowl.
Add tomatoes, shallots, bocconcini cheese and toss to coat.
You can serve right away or you can let sit for about an hour in the fridge to marry the flavours.
Based on 2 servings: 208 calories, 8 g fat, 5 g protein, 7 g fiber, 31 g carbohydrates. Excellent source of vitamin A, vitamin E, vitamin C, folate, vitamin B6, magnesium, iron. Good source of vitamin B1, niacin.
