Tomato Garlic Pasta

This quick and easy-to-prepare meal is vegan and very tasty

Ingredients
  • Olive oil
  • 3 cloves garlic, minced (add more to taste)
  • ½ red bell pepper, sliced
  • ½ green bell pepper, chopped
  • 5-6 large tomatoes, chopped
  • Salt
  • Pepper
  • 3 cups pasta, cooked
  • 1 cup your favourite cheese, shredded
Directions
  1. Heat just enough olive oil to coat bottom of large skillet.

  2. Add garlic, peppers and cook for 3 minutes.

  3. Add tomatoes, salt, pepper and cook for approximately 5 minutes on medium.

  4. Add cooked pasta and simmer for 5 minutes covered.

  5. Turn off heat. Add cheese and let sit covered for about 5 minutes.

  6. Serve.
