Turkey Banh Mi

This Vietnamese-inspired sandwich is filled with turkey, cabbage, cucumber and a cream cheese mixture. Healthy and delicious!

Makes 4 sandwiches
  • 2 cups shredded cabbage mix
  • ½ cup shredded carrots
  • ½ cup seasoned rice vinegar
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons cream cheese
  • 3 finely sliced green onions
  • 1 teaspoon sriracha
  • 4 buns
  • 8 slices of turkey
  • 8 pieces of cucumber, sliced lengthwise, 1 centimetre thick
  1. In a bowl, mix cabbage mix, carrots, seasoned rice vinegar, salt and sugar; let stand about 30 minutes.

  2. In a food processor or blender, combine cream cheese, green onions and sriracha; blend until smooth.

  3. Split buns. Spread cream cheese mixture atop the bottom half of each bun and top each with 2 slices of turkey, cabbage mixture and 2 pieces of cucumber.
