Whole Grain Blueberry Pancakes

A healthy, tasty, filling breakfast

Ingredients
  • 1 cup whole wheat flour
  • ⅓ cup ground flax seed
  • 1 teaspoon cinnamon
  • 1 tablespoon brown sugar
  • 2 tablespoons baking powder
  • 1½ cups quick cooking oats
  • 2 cups unsweetened almond or soy milk
  • 3 eggs, beaten
  • ¼ cup safflower or canola oil
  • 1 teaspoon vanilla
  • 1 cup frozen wild blueberries
Directions
  1. In a large bowl mix flour, flax, brown sugar, cinnamon and baking powder. In another bowl mix oats and desired milk. Beat in eggs, oil and vanilla. Fold in blueberries. Pour batter on pre-heated griddle and cook until bubbly. Flip and finish cooking until brown on both sides.
