Wild Blueberry Stuffing and Wild Blueberry and Apple Compote

Ingredients
  • Blueberry compote:
  • 1 red onion, finely chopped
  • 2 tablespoons virgin olive oil
  • 1 apple, peeled cored & diced
  • 1 stick celery, finely chopped
  • 7 ounces frozen wild blueberries
  • 3 tablespoons caster sugar
  • 2 tablespoons red wine vinegar
  • Stuffing:
  • 9 ounces stale bread, crusts removed
  • 1 large onion, finely chopped
  • 1 stick celery, chopped
  • 3 ounces virgin olive oil
  • 1 small bunch fresh thyme, chopped
  • 2 ounces dried apple, chopped
  • 3 ounces apple juice
  • 7 ounces frozen wild blueberries
Directions
  1. To make the wild blueberry compote, heat onion, apple and celery in oil for 5-10 minutes until soft. Add frozen wild blueberries, sugar and vinegar. Bring to a fast simmer and reduce juices to a syrupy consistency.

  2. To prepare the stuffing, whizz stale bread in a food processor to make large pieces. Set aside. Heat the onion and celery in olive oil for 5-10 minutes until soft. Add the thyme, chopped apple rings, and bread pieces. Stir in apple juice, followed by frozen wild blueberries. Spoon into an ovenproof dish and bake in a preheated oven 350°F (180ºC) for 30 minutes.
