Preheat waffle iron to medium high.
Whisk flour, sugar, baking powder and salt together in a bowl and set aside.
In a separate bowl, whisk egg yolks, milk and oil together. Add flour mixture and stir until just combined. Stir in bacon and cheddar, being careful not to over-mix.
Beat egg whites in a small bowl until stiff but not dry. Fold whites into batter.
Spoon 1/2 cup batter into waffle iron. Close and cook until golden and crisp, about 5-6 minutes. Repeat with remaining batter.
To serve, drizzle with maple syrup, or for a crunchy alternative, sprinkle with maple flakes.
*Maple flakes are dried granules made from pure maple syrup. They pack the same great maple flavour without the stickiness. Look for a carton or bag in the maple syrup aisle.
