Pancake breakfasts are no doubt a fun family affair, but the mess that follows, which almost always ends up in the hands of one person, can be a real pain. From sticky maple syrup fingerprints coating everything within a toddler’s reach, to a dusting of flour that never seems to get thoroughly scrubbed off, clean up can really suck the fun out of this Sunday morning tradition. But fear not because there IS a way to have delicious pancakes without the mess.
Enter Bakerella and her Mini Maple Pancake Muffins with Chocolate Chips. The name might be a mouthful, but these bite-sized breakfast treats act as a perfect alternative for when you and your family absolutely MUST HAVE pancakes.
This recipe does include pecans, but if your child has a nut allergy, withholding the nuts will not affect the deliciousness. Otherwise, everything else you will need for this recipe is the same as if you were making regular pancakes from scratch: buttermilk, flour, baking soda, salt, sugar, etc. Just add a dipping bowl of maple syrup and you will be so caught up with the easy preparation (and easy clean up) you won’t even notice the difference in size.
